Good Friday, a good day to eat Kale

What in the heck do you do with Kale?

  It is so dang nutritious it’s basically a rocking green vitamin.  I love to throw mine in smoothies using my Vitamix blender.  I love chopping it up and tossing it in with home fries as a seasoning.  I also mix it into casseroles and meatloaf.  It is a wonderful cooking green.  If you puree it you have all natural food coloring (think St. Patty’s Day)!

My Recipe for Braised Garlic Greens:

6 Cups chopped Kale

3 cloves minced Garlic

1/2 tsp. salt

1/2 Tbl. oil

1/4 C. walnuts (coarsely chopped)

Throw it all in a pan and stir fry until the Kale turns a nice bright green and softens a bit. Serve as a side dish. Yummy!  Makes four servings.

Dear Jesus, thank you for your amazing design.  Thank you that nutritious foods like kale are so readily available.  Thank you that it can grow year round in our climate.  I pray in thanks that you are our great physician and you give us foods which nourish and assist our bodies in healing from sickness.  Thank you for bloggers like Diana and for keeping her around to share her wisdom with others. And thank you for bearing our sin on the cross.  We are utterly dependant on you.  Amen.
