Remember when I mentioned quinoa (pronounced “keen-WA”)? (If not click here) Well, I still love the stuff. When I make it I like to make extra to have on hand for a quick scramble or burritos. I happen to really enjoy salsa and sour cream, as in I would eat them alone. 🙂

So here’s my un-recipe:
Quick Nutritious and Delicious Breakfast Quinoa
2 C. cooked (re-heated) quinoa
1 Tbl. sour cream
2 Tbl. salsa
Mix a bit and enjoy!

Dear Jesus, thank you that truly good food can be even faster than stopping at the golden arches and be really healthy too. I felt so good all morning because this simple meal was nutritious and protein packed. I hope others will get a chance to give it a try. Amen.
